The world's most expensive spice
An ingredient that stands out for its price is not yet a flavour. It has to do something.
Our saffron and our rose water come from Iran. The saffron gives the ice cream its colour and a dry, almost hay-like undertone; the rose water sets a floral line against it that reaches the nose before the tongue.
Together they hold a balance. Let the rose take over and it tastes of perfume. Let the saffron take over and it turns bitter. Between the two there is one place, and we look for it again every time.
